Prepare for a career in hospitality management in various sectors and environments:

  • Explore how to support business development by looking at economic, political, social, global, and intercultural factors that influence the development of services, marketing strategies, customer retention, and sales programs. 
  • Review strategies to maintain efficient, safe, secure, accessible and healthy hospitality and tourism operations that reduce risk and comply with jurisdictional legislation and legal obligation. 
  • Learn how to support business development through the implementation of corporate sustainability, corporate social responsibility, and ethics principles. 
  • Study project management principles that can be used to define timelines and project deliverables for all members of cross-functional, intercultural, and multi-disciplinary teams. 
  • Develop the skills needed to support the development of a service delivery model and implementation plan to account for practices within global settings. 
  • A co-op work term or experiential learning opportunity of an academic program of study provides students with relevant and applied industry experience.

Co-op work terms are valuable work-integrated learning experiences that allow students to demonstrate their skills in real-world environments with industry support. The market for co-op employment is competitive, and students are expected to participate actively in their job searches. Students, with support, will be expected to identify and secure a co-op work term experience. Co-op work terms are subject to student eligibility, availability, and program review. If unable to secure or participate in a co-op work term, students will complete an alternative experiential learning opportunity.

HOSP2035 Front of House Theory Practice

Meet your customers face-to-face! Front-of-house requires sound problem-solving and communication skills to ensure a positive and memorable experience for your guests. Students will continue to sharpen their customer service skills through role-plays, industry speakers and hands-on experience in our on campus restaurant, Nourish. Topics explored include teamwork, table etiquette, seating guests, special meal requests, taking orders, using the POS, and strategies for successfully working in this fast-paced environment.

HOSP1042 Hotel, Restaurant and Resort Operations 1

This course provides a comprehensive overview of the fundamental principles and practices within the hospitality industry, with a focus on hotel, restaurant, and resort operations. Students will explore the key components involved in managing and operating establishments within these sectors, including customer service, front office management, food and beverage operations, housekeeping, and revenue management.

HOSP1046 Kitchen Theory and Practice

This course examines the fundamental theoretical knowledge required to perform in a professional kitchen. Students are introduced to terminology, equipment, ingredients, and professional culinary standards. Various policies and procedures of industry kitchens are reviewed to highlight topics of safety, hygiene, product identification, and proper food handling.

HOSP1047 Service Excellence & CRM

Customer service is the core of any successful business. Better understanding customer behaviour and an organization's response is foundational to developing and analyzing strategies to build customer loyalty. Students develop knowledge of customer relationship management using current technologies for efficient and successful relationship development and maintenance. Effective customer service skills and strategies are also examined to build loyal and happy customers.

HOSP2034 Banquet and Catering Management

Through this course, students will learn the skills and knowledge required to plan, book, and execute a successful banquet and catering event. The banquet industry will be reviewed in detail to expose students to the various customer requirements and requests that need to be considered when securing bookings. Techniques in negotiation, contract management, and sales strategies will be further explored.

HOSP1044 Food and Beverage Costing

The principles of food, beverage, and labour controls are crucial for ensuring the profitability and efficiency of hospitality operations. By studying topics such as cost control procedures, labour cost analysis, pricing methods, internal controls, external influences, and inventory control methods, students gain a comprehensive understanding of how to manage resources effectively within a hospitality setting.

HOSP1045 Hospitality Marketing and Social Media

This course explores marketing beyond advertising, focusing on the hospitality industry and social media. Students learn to identify consumer needs, analyze competition, and develop strategies to position products effectively. They also delve into the marketing mix, which involves communicating brand value, optimizing distribution channels, pricing strategies, and incentivizing consumer action.

HOSP1055 Hotel, Restaurant & Resort 2

Hotel, Restaurant and Resort Operations 2 will explore facility management and key components of project management that will ensure the efficient operation of events, services and facilities.

HOSP1048 Nutrition- Health and Wellness

In this course students will gain knowledge of health food trends and the ever-growing demand for healthful and delicious food service. Students will learn to effectively combine food service administration and nutritional care principles to promote wholesome menu options that are appealing, taste great and satisfy nutritional needs. Students will learn about quality food preparation, basic diets and nutrition, proper sanitation and safety practices, effective communication, and quality customer service.

HOSP1056 Wine and Beverage/ Mixology

Imagine learning about wine, spirit and beer production in a region that is well known for top-quality versions of all of the above. With Prince Edward County (PEC) just south of Loyalist College, this will be your reality! You will gain an appreciation and knowledge through guided tastings, classroom discussions, mixology demonstrations and guest speakers, culminating with a field trip to PEC to see some of the production first-hand. All of this will lend to your understanding of the importance of a strong beverage program in a successful hospitality operation.

HOSP2044 Co-op & Career Prep

Students develop self-awareness of skills and abilities and how to translate that information into professional documents aligned to specific jobs, career paths and interview preparation. This course builds student skills with networking, understanding the value of professional bodies, and how to conduct research on changing workforce demands and trends in order to enhance employment opportunities. Students will learn and practise effective interview skills and techniques. This course provides tools for students as they chart their paths for future career opportunities.

HOSP2037 Human Resources Law in Canada and Risk Management

Through this course, students will be introduced to the ever-changing complexities of Canadian employment law. Students become knowledgeable about the legal framework, jurisdictional issues, and current legal trends by interpreting case law and examples of violations in the hospitality industry. Students will also learn about a project's life cycle and the activities required to manage risk.

HOSP2042 Leadership and Team Management

Effective leadership and team management skills are essential skills for success. This course is designed to offer an exploration of the principles, strategies, and practices of leadership within the context of team dynamics and emotional intelligence. Participants will explore leadership from a variety of aspects, including communication, motivation, initiative, relationship building, conflict resolution, and performance management, with a focus on their application in leading and managing teams effectively.

HOSP2036 Procurement and Cost Control

This advanced course delves into the intricacies of hospitality cost control and profit management, focusing specifically on projections and budgeting techniques essential for optimizing financial performance in the dynamic hospitality industry. Building upon foundational knowledge of cost control principles, students will explore advanced strategies and methodologies to forecast, analyze, and manage costs while maximizing profitability.

HOSP2043 Sustainability and CSR

This course examines how global organizations are integrating the three pillars of sustainability (economic, social and environmental) throughout the functional areas (e.g. human resources, marketing, operations, accounting, and finance) of business to remain competitive in the long term. Students will explore the historical context, the business case, internationally recognized frameworks and respective principles, the role and significance of multiple stakeholders, sustainability assurance, greenhouse gas emissions and climate change. Students will participate in cases and investigate the sustainability practices of global entities.

HOSP1050 The Business Plan

In this course, students will learn the skills and competencies of business ownership. Students will research and prepare a comprehensive business plan that enables strategic decision making that considers influences that are occurring locally, nationally and globally.

WKPL2051 Co-op

Students will apply previous learning in a hands-on environment in the Canadian industry to gain experience to add to their résumés. Prerequisite: HOSP 1042, HOSP 1046, HOSP 1047, HOSP 2035, HOSP 1044, HOSP 1045, HOSP 1048, HOSP 2034, HOSP 1050, HOSP 2036, HOSP 2037, HOSP 1053, HOSP 1054, HOSP 1055, HOSP 1056, HOSP 2042, HOSP 2043, HOSP 2044, HOSP 1041, HOSP 1052

Admission requirements

Required academic preparation

  • A diploma or degree in culinary, business, marketing or a related field from a recognized college or university or equivalent.

All teaching within Loyalist is conducted in English. In order to be successful in a program, skills such as communication, listening comprehension, and reading and writing must be at a level sufficient to meet the demands of post-secondary studies. All applicants to Loyalist whose first language is not English, or whose previous education was in another language, will be expected to provide an English proficiency assessment for admissions approval. Costs

Approximate costs per year (2024 – 25)

The following fees do not include living costs, textbooks or additional program-specific expenses/supplies.

  • International Tuition: $15,000
  • Full-Time Ancillary Fees:* $1,367
  • Mandatory Health Insurance: $659
  • Total: $17,026

Co-op work term fee

The fees listed above do not include the co-op work term fee ($900). Students are expected to participate actively in securing a co-op work term. If ineligible or unable to secure a co-op work term, students are required to complete an alternative experiential learning opportunity in their final semester and will be assessed a different fee ($2,800). These fees are not added to fourth semester tuition fees; rather, they replace regular semester tuition fees.
