About Nourish
As an integral part of developing tomorrow’s industry professionals, Nourish acts as a platform for students to put their new practical skills and theoretical knowledge to the test. They do so in a fully operational kitchen, serving real food, to real customers.
As part of this work-integrated learning environment, first-year students are mentored by second-year station leaders. In this supervisory role, second-year students consult with the chef instructor to organize daily production. During their time in Nourish, all students gain experience working in a number of professional restaurant roles, both in front and back of house. This includes rotations on the hot line, garde manger and bakeshop. Students will have the opportunity to execute a variety of service styles, ranging from takeaway, buffet, à la carte and table d’hôte. Working as a team students navigate the kitchen and learn what it takes to be ready for service.

About The Market
Discover delicious recipes and indulge your taste buds with a selection of our favourites, prepared locally by our Loyalist College culinary students. With both fresh and frozen items available, the Loyalist Market is a great place to fill both your fridge and freezer with quality meal options at an affordable price.
Operating alongside Nourish, the Loyalist Market offers students an alternative look at food service. As a retail outlet, students learn large-scale production techniques, practice product consistency, and further develop their understanding of financial responsibility.

Art of Flavour
Beginning in 2016, one exciting way our students have been able to broaden their culinary experience is through the exclusive Art of Flavour dinner series. As part of this series, the Loyalist College Culinary program has been fortunate host many guest chefs, winemakers and hospitality experts from the surrounding area of Hastings and Prince Edward County and beyond. Each guest brings with them a unique perspective, specialty techniques and style. Students further their understanding of food and beverage pairings, while also being introduced to local business owners and developing their connections within the community.
